The perfect complement to a backyard BBQ?  Whether you are the guest or host, a fresh SALAD is a great side item to delicious grilled meats and veggies!  Year round, I’m known as the “Salad Girl” who will always bring one to ANY get-together or holiday party.  Need some lettuce inspiration?  Here are some great salad combinations to try with homemade dressings!

 

Strawberry Walnut Spinach Salad with Balsamic Vinaigrette

Salad Ingredients

Full bowl of baby spinach leaves

1-2 cups chopped strawberries

½ cup chopped & roasted walnuts (roast in oven 2 minutes… it makes a difference to bring out the smell and flavor)

½ cup crumbled feta cheese

¼ cup diced red onion

 

Dressing Ingredients

¼ cup balsamic vinegar

¼ cup olive oil

1 Tablespoon Dijon mustard

1 teaspoon minced garlic

Salt & pepper to taste

 

*Makes more dressing than you’ll need for the salad, so slowly add to the dish!

 

 

Roasted Sweet Potato, Edamame and Pistachio Salad with Honey Vinaigrette

Salad Ingredients

Full bowl of mixed greens (spinach & butter lettuce are my favorite combo)

3 sweet potatoes, cubed and roasted with ground cinnamon and chili powder

1 cup of shelled edamame, warmed

½ cup dried cranberries

½ cup shelled pistachios

½ cup crumbled goat cheese (my fave!)

¼ cup chopped green onion

 

*This is my go-to salad!  You can easily switch up the nut, roasted veggie, and cheese based on what you have on hand!

 

Dressing Ingredients

2/3 cup olive oil

1/3 cup honey

1/3 cup rice wine vinegar

2 teaspoons soy sauce

Salt & pepper to taste

 

*Makes more dressing than you’ll need for the salad, so slowly add to the dish!
